Mars Bar Copycat
We all crave our favourite treats (I certainly do); and it goes without saying that they often are not really nourishing. Instead of eliminating them from my diet, making a raw version of my favourite chocolate bars has become a passion (or even maybe a nutty obsession!).
These Mars bars copycats hit just the spot without having to give up on nutrients! It is a delicious combination of cashews, dates, vanilla, tahini and coconut (to give the chewy texture of the Mars bar), all beautifully coated in dark chocolate with a pinch of sea salt for an epic combo.
Without further ado, here is an introduction to raw cooking for you with… the raw Mars Bars.
Mars Bars Copycat
(makes 8 bars)
Ingredients:
CHEWY BASE
1st layer:
1 cup cashew nuts
2 tbsp honey or maple syrup
2 tbsp melted coconut oil
2 tsp vanilla extract
2nd layer:
1/4 cup almond or cashew butter
1/4 cup coconut oil
2 tbsp tahini
1 cup dates* (pits removed)
1 tsp vanilla extract
1 pinch salt
CHOCOLATE COATING
150g melted 70+% dark chocolate
Method:
In a high speed food processor, blend together all the ingredients of the 1st base layer. Press with the palms of your hand or the back of a large spoon in a small cake or loaf pan (e.g. 8x16cm) and pop in the freezer to set for 10min.
In the food processor (no need to wash it), blend together all the ingredients of the 2nd base layer. Press on top on the 1st layer and place in the freezer for another 10 min.
In a bain-marie, melt the chocolate and poor it over the 2 layers. Sprinkle with sea salt and place in the freezer for 2h or in the fridge overnight.
Slice into 8 even bars and voilà!
You can store these little bombs in an air tight container in the fridge for up to 4weeks, but I doubt you’ll wait that long to finish them all!
*Medjool dates are the best but I’ve made these with smaller dates and it worked well.
