Vibrant Beetroot, Carrot and Rocket Salad
This salad is a winter winner, packed with colourful root vegetables it’s a nutritious dish to beat the winter blues!
Beetroots are rich in iron and vitamin C, and they help promote a healthy immune system which is key all year long (but especially in the winter months), to help the body battle infections.
Vibrant Beetroot, Carrot and Rocket Salad (serves 4)
Ingredients:
For the salad:
1 beetroot (peeled and grated)
2 carrots (peeled and grated)
1 red onion (thinly sliced)
1 cup edamame beans (alternative, 1 cup of cooked chickpeas)
1 handful fresh parsley and/or mint (thinly sliced)
1 handful of fresh rocket or baby spinach
Optional: 1/3 cup toasted nuts or seeds (almonds and pumpkin seeds work well), 1/3 cup crumbled feta cheese, 1 diced avocado,
For the vinaigrette:
2 garlic cloves minced or pressed
Juice of 1 lemon
4 tbsp apple cider vinegar (with the mother)
2 tbsp extra virgin olive oil
1 tbsp maple syrup or honey
Dijon mustard to taste (I used 1 tbsp)
Salt and pepper to taste
Method:
In a large salad bowl mix together the beetroot, carrot, red onions, edamame beans, herbs and rocket
Prepare the vinaigrette and incorporate well in the salad
Add any optional ingredients and serve
