Vibrant Beetroot, Carrot and Rocket Salad

This salad is a winter winner, packed with colourful root vegetables it’s a nutritious dish to beat the winter blues!

Beetroots are rich in iron and vitamin C, and they help promote a healthy immune system which is key all year long (but especially in the winter months), to help the body battle infections.

Vibrant Beetroot, Carrot and Rocket Salad (serves 4)

Ingredients:

For the salad:

  • 1 beetroot (peeled and grated)

  • 2 carrots (peeled and grated)

  • 1 red onion (thinly sliced)

  • 1 cup edamame beans (alternative, 1 cup of cooked chickpeas)

  • 1 handful fresh parsley and/or mint (thinly sliced)

  • 1 handful of fresh rocket or baby spinach

  • Optional: 1/3 cup toasted nuts or seeds (almonds and pumpkin seeds work well), 1/3 cup crumbled feta cheese, 1 diced avocado,

For the vinaigrette:

  • 2 garlic cloves minced or pressed

  • Juice of 1 lemon

  • 4 tbsp apple cider vinegar (with the mother)

  • 2 tbsp extra virgin olive oil

  • 1 tbsp maple syrup or honey

  • Dijon mustard to taste (I used 1 tbsp)

  • Salt and pepper to taste

Method:

  1. In a large salad bowl mix together the beetroot, carrot, red onions, edamame beans, herbs and rocket

  2. Prepare the vinaigrette and incorporate well in the salad

  3. Add any optional ingredients and serve
