Barbie Pink Dip

Inspired by the new Barbie movie (everyone is obsessed I know!) I whipped that one up yesterday because I had leftover beetroots and oh my... Sooooo moreish! This dip is extra smooth and combined the acidity of balsamic vinegar roasted beetroots, with tangy feta cheese and the comforting softness of butter beans perfect for the apéritif

Beetroots contain Folate (aka B9 vitamin). - Folate is essential for making red and white blood cells in the bone marrow and to produce DNA and RNA. - That is why it is a key vitamin during pregnancy, infancy and adolescence!

Barbie Pink Dip (serves 4)

Ingredients:

  • 1 Beetroot peeled and cut in cubes

  • 1 tbsp of olive oil

  • 1 tbsp balsamic vinegar

  • 1/2 block feta cheese

  • 1 can butter beans rinsed

  • 1/2 lemon juiced

  • Ground pepper to taste

  • Optional: 1 tbsp walnuts, mint leaves

Method:

  • In a pan, roast the beetroots with the olive oil and balsamic vinaigre with lid on, stirring occasionally, until tender. Approximately 20min.

  • Let the beetroots cool down and then add to a blender with all remaining ingredients.

  • Blend until smooth.

  • Garnish with crumbled feta, walnut pieces or mint leaves.

  • Serve on warm pitta, bread, carrot sticks, cucumber sticks, falafel, also delicious in sandwiches!

  • Make it vegan by using vegan feta cheese
