Silken Tofu Scramble

2 servings - 10 minutes

Ingredients:

  • 1 tsp extra virgin olive oil or coconut oil

  • 1/2 yellow onion thinly sliced

  • 1 tsp turmeric

  • 1 tbsp nutritional yeast

  • 1 block of firm silken tofu (about 400g)

  • 2 cups baby spinach

  • 1/2 avocado

  • 1/2 lemon

  • Optional: red pepper flakes, sliced spring onions, pepper

Method:

  1. In a frypan heat the oil on medium heat then add the onions and cook until translucent (2-3 minutes).

  2. Add in the turmeric, nutritional yeast and tofu and break it up with a wooden spoon so it becomes a scramble consistency. Cook for another 1-2 minutes.

  3. Throw in the baby spinach and cook for another minute.

  4. Remove from the heat and serve with your choice of toast, quinoa or a thick slice of bakes pumpkin or sweet potato.

  5. Slice the avocado to add on top and squeeze some lemon juice.
