Ingredients:

  • 2 cups ground flaxseeds (linseeds)

  • 1 cup ground almond (almond flour)

  • 6 eggs

  • 1.5 TBSP baking powder

  • 1 TBSP apple cider vinegar

  • 1/2 tsp baking soda

  • 1/2 cup water

  • 1/2 tsp salt

  • 1/2 cup whole flaxseeds (linseeds) to decorate (optional)

Method:

  1. Preheat the oven at 180C.

  2. In a bowl whisk the eggs, then add the flaxseeds, almond flour, baking powder, salt and water and mix.

  3. In a small bowl mix together the baking soda and apple cider vinegar and let it react. Then add to the mixture and incorporate well.

  4. Poor into a lined loaf tin (1L or 12x14), decorate with whole linseeds and bake in the oven for 60 minutes.

  5. When the loaf is cooked, wait for it to cool down before transferring it out of the loaf tin.

  6. Keep in the fridge for up to 1 week or slice it and store in the freezer for up to 2 months.
